Amino Acid Degree

The concentration of amino acids.
A high value brings out sweetness, a low value results in lightness.

Acid Degree

Values indicating the amount of succinic acid and lactic acid.
The higher the value, the dryer (sharper) the taste.

SAKE Meter Value (SMV)

Measure of sweetness / dryness.
High positive values indicate dryness, and low negative values indicate sweetness.

Genshu (Undiluted SAKE)

SAKE whose alcohol content has not been adjusted by adding water.

Kizake (Pure SAKE)

Non-pasteurized SAKE.

Rice Milling Level

Numerical value indicating how much polished rice was obtained from a given quantity of rice.
