"Ginjo" refers to SAKE that has distilled alcohol added to the water, rice koji, and rice, which has been milled so that 60% or less of the original grain remains.
In contrast to Junmai Ginjo, "Ginjo" is characterized by its finish and its rich ginjo fragrance, which are the result of the added distilled alcohol.
