Daiginjo

 

"Daiginjo" refers to SAKE that has distilled alcohol added to the water, rice koji, and rice, which has been polished so that 50% or less of the original grain remains.

In contrast to Junmai Daiginjo, "Daiginjo" is characterized by its finish and its rich ginjo aroma, which are the result of the distilled alcohol that has been added.
