We partner with Farm Ichimaru in Matsukawa to obtain 100% Miyama Nishiki rice. We polish it to 39%, creating a bright bouquet and rich flavor that conveys to the drinker the passion the farmers put into this rice. We slowly and assiduously bring out the maximum flavor of the rice. This brew is carefully prepared using traditional techniques. A gorgeous aroma and clean, robust flavor in the mouth. This brew is very smooth and presents a flavor distinctive to Miyama Nishiki rice with a gentle umami flavor -- a true delicacy.

Nuts and Bolts

We recommend this brew as an aperitif, but it also pairs well with seafood and vegetable dishes like flounder with kelp.

Brewery Information

Nakazen Sake Brewery

Brewery located in Chubu

Fukushima, Kiso-machi Kiso-gun, Nagano

We are a small brewery in the mountains.
Rather than increasing output, we strictly limit our production in order to remain entirely hands-on in the process and improve each step.

The enthusiasm and commitment of the rice growers resonates with us, and we passionately craft our local sake to honor their work.

Our goal is to create a classic sake to soothe the fatigue of hardworking mountain peoples -- a brew that offers peace of mind and a gentle, pleasant taste.

This year, we have revamped our malt room, which is responsible for the signature ingredient that dictates the final taste of the sake.

We want to continue producing sake that lives up to our vision for the best brew.
