Using proprietary yeast cultures allows us to produce a brew found nowhere else. Using Takane Nishiki from Niigata Prefecture, we produce brews with a distinctive depth and richness and a wide range of flavors and aromas. Using underground waters sourced from Mount Yoneyama, and brewers' rice cultivated on its own farms, Ryoichi Emura of the Echigo Toji produced a light and umami-rich sake.
