The koji mould used comes from Yamada Nishiki brewer’s rice produced in Eiheiij-cho, Fukui Prefecture and Gohyakumangoku brewer’s rice also from Fukui. The Yamada Nishiki yields a rich and deep flavor, while the Gohyakumangoku lends a light, clear, and crystalline flavor. Combining these to maximum effect allows us to produce this junmai ginjo sake.

Made with Yamada Nishiki brewer’s rice produced in the clear underground waters at the foothills of Mount Hakusan. The waters are also sourced from this area and used to purify the rice. Hakuryu is produced from a clear and mineral-rich water that is free of impurity. This fully brings out the umami of the rice.
