SAKE Sommelier Comment
This consummate offering is an ideal representation of SAKE’s central ingredient with its purest fragrance of rice combined with a golden straw yellow hue. Sweet and pungent, with a playful bitterness that tickles the throat.
Kinteki Shuzo -Hokkaido-
Brewery located in Hokkaido
Zityuuou71-7, Chuo, Shintotsukawa-cho Kabato-gun, Hokkaido, 073-1103, Japan
Kinteki Shuzou is a traditional brewery with a 110-year history in Hokkaido. Located at almost the exact center of the island of Hokkaido, near the northern end of the Kabato district with Hokkaido's "mother river" Ishikari-gawa to the east, nestled to the west by the Moroyama river of Mt Pinneshiri, revered as the mountain of the gods, Kinteki Shuzou enjoys a climate rich in seasonal transformation. In wintertime its inland location in a frigid climate zone means the cold is intense and unrelenting, and the mountains of snow make the air clean and pure, creating the kind of climate that is especially essential to the brewing of the most flavorful SAKE.
Kinteki Shuzou is painstaking about brewing truly local Hokkaido SAKE, using only Hokkaido-sourced brewing rice, namely the Kitashizuku and Ginpu varietals grown locally in Shintotsukawa and Suisai from other Hokkaido locations.
Wine ranking authority Robert Parker released the first such rankings for SAKE in September 2016. Kinteki was the only Hokkaido brewery to achieve an Outstanding rating with its junmai ginjo Gin Shizuku winning 91 points.
