Using 100% no-till Omachi rice, a unique rice developed by legendary grower Hajime Sakon, we select cold Omachi spring water, considered among Japan’s 100 finest water sources, for our brews. Omachi rice is noted for a unique umami flavor, which we bring out through a low-temperature fermentation. This makes this brew a classic sake in the orthodox Omachi tradition. This sake, intended for sale overseas, can only be purchased in Japan through our online store.
