This brew is carefully prepared at every step, starting with the production of local rice. The inherently rich flavor of Hitogokochi rice, a natural product of this region, is drawn out with rice polished to 80% and prepared as a junmai sake. This brew has a full body that develops into a range of flavors as you drink. The sake can be warmed to further add new dimensions of enjoyment. This sake comes highly recommended and is truly the best way to taste the richness that the Kiso region (Nagano) has to offer.

This year, we have revamped our malt room, which is responsible for the signature ingredient that dictates the final taste of the sake.
