The first step towards creating a signature Eiheiji terroir brand. Since 1988, we have pursued the cultivation of Yamada Nishiki brewer’s rice here in Eiheiji-cho, Fukui Prefecture, using that rice to craft our brews. Using 100% Yamada Nishiki from Eiheiji-cho, the umami flavor of the rice is richly concentrated in special junmai sake. The high-quality acidic content helps cleanse the palate of meat- and fish-based oils, preparing you for your next bite. Whether served chilled or warm, this sake offers a refined umami and aftertaste.

Made with Yamada Nishiki brewer’s rice produced in the clear underground waters at the foothills of Mount Hakusan. The waters are also sourced from this area and used to purify the rice. Hakuryu is produced from a clear and mineral-rich water that is free of impurity. This fully brings out the umami of the rice.
