Made with 100% omachi rice, and water from one of the one hundred exquisite waters of Japan, Omachi Spring, this tobingakoi SAKE (SAKE pressed into 18-liter "tobin" bottles with the brewer selecting the best SAKE of the batch) has been granted the special designation daiginjo-shu (meaning "very special brew"). This mature SAKE is a special blend of seven parts sake fermented in refrigerators under strict temperature control for over 20 years, and three parts unfermented SAKE.
